Pasta Roll-Ups
(Lasagna's Lower Maintenance Cousin)


This is an incredibly easy recipe my mom actually gave me the idea to cook. For the spread, I used the Laughing Cow Blue Cheese flavored Spread. It sounds weird to use in the recipe, but it honestly tasted great. The original recipe actually calls for goat cheese, but Laughing Cow is good for keeping cost down. Either way, I personally suggest choosing an herbed goat cheese or herb flavored Laughing Cow cheese, to add more flavor.


Pasta Roll-Ups

Ingredients:
Lasagna sheets
Goat Cheese (Or Laughing Cow)
Baby Spinach
Pasta Sauce
Mozzarella Cheese

Instructions:
1) Preheat Oven to 350F

2) Cook lasagna until al dente
3) Pat lasagna sheets with a paper towel to dry
4) Spread Goat cheese (or Laughing Cow) on each sheet
5) Press Spinach leaves onto the cheese

6) Tightly roll each lasagna sheet, and place in baking dish seam-side down

 7) Pour sauce on top of pasta rolls and sprinkle with mozzarella cheese
8) Cover baking dish with foil, and bake until mozzarella is bubbling
9) Remove foil and bake until mozzarella lightly browns
10) Let cool, spoon into a bowl, and enjoy!






 


                Variation:
Substitute fresh Basil for Spinach (or use both!) and add pepperoni.

  2. wait, is this MOM'S lasagna recipe or are you just winging it with regular pasta sauce?

    1. It's Mom's. Mom made this with spinach, goat cheese (later laughing cow), mozarella, and she doctors up regular bottled pasta sauce by reducing it in a pot with onion, crushed garlic, and a little red wine.
